Chef Accursio shares his passion and reveals his mastery of the world’s most celebrated confection, chocolate. Through a step-by-step introduction to chocolate, Chef Accursio will cover buying, tasting, tempering, coating and decorating with chocolate in a hands-on environment. After various skills are demonstrated, you will have the opportunity to work with your own chocolate, and use it in cold and baked pastries as well as learn to use chocolate as a sweet and savory enhancement to various main dishes. Regardless of your experience, this chocolate workshop will provide you with skills and knowledge that will pay you back for years to come! The class will cover chocolate/cacao, different techniques, Cocoa Cake sponge, Cocoa ravioli, Truffles, Mascarpone Mousse. The fun starts at 10:30am at Solare with an Italian-style coffee of your choice and a pastry.
